Steam rolled up from the dish with fresh-cooked spaghetti. U pulled handy out, then took some photos of it and saved them. This digitized jolly-meal has been kept in U’s cellphone in obscurity for a while. Months later it has been accidentally found again, when U was having a time in relax and revising the photo album.

U noticed that the delight of the (happy-meal) moment has been buried in history. Then U decided to upload the photos online (-SNS), to make the process of memory more definitive and somehow effective to remind. What U shared is only a photo of what U just ate for lunch, which is not that special at all. (‘Food’ is included in the 1) Physiological part according to Maslow’s Hierarchy of needs, as one of the basics at the bottom of the pyramid.) But unexpectedly, it seemed like it did something in­de­ed. Other SNS users began to give quite positive comments on the photo. And their feedbacks made U’s neurons dance. U’s meal is now being assessed. Also, the ‘Meal’ itself extended its meaning; [to be; selected as proper food (to share or to get good comments) – photographed – digested – posted and shared – evaluated – reminisced – repeated]. Throughout the procedure, U experiences so many thoughts and feelings are in and out of U’s mind. (In accordance with Maslow’s idea, after the ‘food’ part – picture, eat then post – is done, 2) the Safety needs – to feel vulnerable and nervous – starts to ring alarm until any single reaction comes out. Mostly this doesn’t take so much time. Sooner or later there come the next ones; 3) Social belonging – willing to be ‘liked’ by other users, 4) Esteem – get other’s respect and have self-confidence with photos, 5) Self-actualization – a power and a motivation to do a new ‘Meal’.)

However, like everyone knows, digital-content-users get easily bored due to repetitive pattern of photos. They just scroll down. U found out that U is not very different from them. Therefore, U starts to take photos in some different angles and downloads 3 or 4 photo editing apps. The showtime is on again. Now, other digital users see modified photo. It is same ‘food’ picture, but at the same time they see this as ‘image itself’, which is posted on a shared platform in their hands. The original figure or color of food is not the biggest issue for them anymore. Without realizing it, they consider this ‘image itself’ is the truth that they have to see. It is not only U’s photo. Others also fulfill their timeline with their modified photos as if they are synchronized somehow. Those posts separate the digital space from the space that we actually live in.
 
We have been thinking about the sincereness of modified pictures on timeline. They themselves form new time, new space, and new meanings. But those are actually the ghosts. People wear masks, follow the ghosts and find comfort from behind the masks. It could be sincere, if that is what they believe. Though they don’t set their minds on the properties of matter (proto-food). Which, with curves, lines, bunch of bumps or circles, or some high gloss. ‘Modify’ means ‘erase prototype and make new syndrome’ to us. Again, can it be considered as ‘real’?

We observed objects and thought how can we not omit the properties of proto-matters, when we convert them into images. We chose everyday meal as our subject just like U. Like many other SNS users do, we also used mobile camera but without editing. The built-in flash gave us the chance to find out the frozen moment, and so we could look closer like we were watching under a microscope.

This book is either our research or report. So hereby you will see (our) captured moment of substance itself as food. You might just flip through the pages like you scroll down the screen in your hand. But at some points, if the flipping stopped and your eyes fixed, you will see what we spotted.

김이 모락모락 나는 막 나온 스파게티에 포크를 꽂아 넣기 전, 
U는 휴대폰을 꺼내 들어 사진을 찍어 저장했다. 이렇게 디지털화 된 대부분의 아름다운 요리 사진들은 U의 사진첩에 고이 모셔진 채 그대로 잊혀졌다가 몇 달 혹은 몇 년이 지난 후 우연히 사진첩을 둘러보는 중에 다시 발견되곤 했다.

그 동안 사진이 잊혀졌다는 것을 알아차린 U는 즐거웠던 식사를 좀 더 간편하고 의미 있게 기억하기 위해, 혹은 자주 꺼내 보기 위해 SNS라는 정보 공유 플랫폼에 업로드하기 시작한다. 매슬로 Abraham H. Maslow 의 인간 욕구 5단계 중 가장 낮은 단계에 해당하는 ‘식食’의 영역을 기록하여 공유했을 뿐인데, 이 사진들은 디지털 공간에서의 다른 SNS 유저들에게 상당히 좋은 피드백과 공감을 받았다. 긍정적인 반응을 얻은 그의 ‘식食’사진은 그에게 단순히 음식을 먹는 것 이상의 만족감을 선사했다. U는 이제 [알맞은 음식을 골랐고, 행복하게 먹었으며, 그 과정을 기록하고 공유함으로써 자신의 식사를 평가받는다. 그리고 그것이 긍정적인 인정을 받았을 때 해당 식사를 다시 한번 만족스럽게 추억하고, 다시 이 과정을 반복하고 싶어지게] 된 것이다. 전 과정을 통해 U는 매슬로의 정의 중 1단계 이상의 것들이 충족되는 것을 경험하는데, 게시 이후 타 유저들의 반응을 얻기까지의 불안감을 느끼는 2단계를 순식간에 뛰어넘어 곧이어 아주 짧은 시간 안에 3단계(소속과 사랑의 욕구), 4단계(존중의 욕구), 5단계(자아실현의 욕구)까지 모두 느끼는 것이 그것이다.

이것이 반복되는 과정에서 유저들은 같은 패턴의 사진에 금방 지루해하고 그저 많은 사진들을 스크롤하기에 바빠진다. U는 자기 자신도 그 중 하나라는 것을 발견한다. 그는 새로운 각도에서 사진을 찍거나 사진 편집 어플리케이션을 설치해 사진에 변형을 가하여 다시 주목받고자 한다. 이제 다른 디지털 유저들은 변형된 사진을 본다. 이것은 U가 음식을 찍은 ‘식食’사진이지만, 동시에 U가 공유 플랫폼에 게시한 어떠한 ‘이미지 자체’로 인식된다. 음식의 본래 모습, 색이 어떻든 그들은 잘 꾸며진 사진을 보며 그 자체를 사실로서 받아들인다. 변형된 이미지들은 U의 것만이 아니다. 사람들은 마치 동기화라도 된 양 그들의 것을 타임라인에 가득 채운다. 이렇게 게시된 사진들은 디지털 공간을 우리가 살고 있는 세상과 다른 곳으로 만들고 구분 짓는다.

 
우리는 변형된 사진이 가질 수 있는 진실함에 대해 생각해 보았다. 변형된 사진은 그것만의 공간과 공기, 시간을 새로이 구성한다. 화면 밖 세상에서 보는 이것들은 환상이다. 환상 속에서 사람들은 보여지기 원하는 것들, 즉 아름답게 꾸며진 모습을 드러내고 그것으로 인해 위로 받는다. 변형된 것일 지라도 이러한 이미지들로 그것만의 세상을 구축하고 위로 받는다면 그것 또한 진실하다고 할 수 있겠다. 하지만 변형으로 인해 가려진 본래 물질의 특성은 잊게 만든다. 하지만 이것들은 사실 놀라운 굴곡과 선으로 이루어진 것일 수도 있고, 눈을 멀게 할 정도의 수많은 원들로 가득 채워졌을 수도 있으며, 엄청난 광택을 가졌을 수도 있다. 아름다운 분위기를 전달하도록 유행에 맞게 편집된 사진은 물질의 다양한 특성을 삭제한다. 이것이 완전히 진실한 이미지일까?

우리는 물질의 특성 및 성격을 관찰하고 그것을 이미지로 전환할 때 원본의 특성이 누락되지 않기를 바랐다. 먼저 U와 같이 가장 일상적인 소재인 음식을 이미지의 주인공으로 선택했다. 대부분의 디지털 유저가 그렇듯 휴대폰 카메라를 전환 매체로 사용했고, 사진 편집 즉, 변형은 가하지 않았다. 우리는 물질을 그 순간에 그대로 멈춰 있을 수 있도록 얼려주는 촉매제의 역할을 하도록 내장 플래시를 사용하였다. 이는 화면 속에서 물질의 특성을 더 자세히 들여다 볼 수 있게 만드는 돋보기 역할을 했다.

이를 통해 물질-음식-의 리얼리티적 순간에 집중하고, 스크린 속에서 조차 존재 자체로 취급 받고자 하는 물성 탐구를 시도했다. 당신은 마치 SNS 사진을 스크롤 하듯 매 페이지를 넘길 수 있다. 그러다 어딘가에서 당신의 시선이 멈추었다면 그 순간 당신도 우리와 같은 순간을 포착하고 공감하게 된 것이 아닐지 짐작해 본다.

Autonomous Sensory Meridian Response (ASMR): Egg

  1. Egg

In tennis 0 means ‘love’. This came from a French word ‘l’oeuf’ (it doesn’t sound exactly the same though), since France is the birthplace of tennis. Meanwhile, people decorate Easter eggs with care and share to others. The hatch of the chick signifies the Resurrection of Jesus. Egg, it has something related to love and renewal. Just by cooking and eating fresh healthy eggs, there in your mind grows love instead of death. There’s no mistake about saying this. Moreover, the visual, auditory, tactile and olfactory stimuli give you sensual stability and pleasure, while you cook and eat them. Hereby I share my suggestions for some recipes, and the way of perfect intake.

 

Poached egg

1. in Oriental style (Nantang)

  1. to cook: Boil water with some vinegar and break an egg in an oiled ladle. Keep the heat gentle, and very gently rock the lower part of the ladle. When the white of the egg become soft-boiled, steep the ladle completely in the water. Watch the egg white turning opaque in peace, slowly covering yolk. If the water boiled too hard or the white got loosened in the flow of water, you might see a spectacle, though it is failed as poached one.
  2. to eat: Place it on the plate and let’s put garnish on. Make chives dance, if you are a forsythia-garden person. If you want some stronger but warm contrast of colors (yellow-red), put some red pepper strips on it. Or simply sprinkle sesame salt for tone on tone – light combination. Vertically stick a metal spoon into the soft poached egg.

2. in Occidental style

  1. to cook: It is same with Nantang, until you simmer water with vinegar. Crack your egg into a bowl or onto a saucer, then slide into the pan. It looks like mollusks (let’s say octopus or jellyfish) moving around in some way. Dribble the egg with a pair of chopsticks and sculpt its figure. Otherwise, you can stir the water to create a gentle whirlpool. This way is not only thrilling but also easy to wrap around the yolk with the egg white. However, it can be ruined in a swirling moment if you aren’t careful. Cook for 3 minutes until its color turns into zinc white. Now retrieve the egg with a slotted spoon.
  2. to eat /no.1: Arrange an English muffin, set a ham or a bacon on muffin, then set the egg on them. Pour plenty of hollandaise sauce and cut once from top to bottom. When your Egg Benedict opens its mouth, you will see the layer of ivory bread, pinky ham or bacon, deep yellow yolk and light yellow hollandaise are finally being mixed and coated with the whole shiny yellows.
  3. to eat /no.2: Spread any spread you like on a baguette or a plain bread, add toppings, then place the poached egg on. This time give a gentle press with side of knife. In no.1, it sort of looked like blood slowly oozes out of the wound just as you’ve seen in one of the Samurai movies. But here, it is spouting.
  4. to eat /no.3: Put the egg on Kimchi Fried Rice, poke on every side with a chopstick, press hard with a spoon. You are standing in front of the yolk fountain.


Soft-boiled egg

1. boiled egg

Have a saucepan filled with enough water and bring it up to the boil. When large bubbles are breaking on the surface put a spoonful of salt and quickly but gently lower the eggs (from room temperature) into the water. Watch the dance of the eggs. After 7 minutes, cool the eggs with cold water. If you like firmer ones, skip this. But if you’d like to make Ajitsuke Tamago, this is indispensable. Shell, then grab and release a water-balloon-like egg, reminding your cranky day. Let’s dip a bit of salt, place the egg in your mouth.

2. Ajitsuke Tamago

  1. to cook: First combine 1:1:1 of soy sauce, mirin, and water. Boil, and then cool down. Put boiled eggs in the fridge and leave them more than a day.
  2. to eat: Place a marinated soft-boiled egg on a cutting board. Cut the egg by using a silk thread. The egg will be cut in half and show beautiful cross section. You will see the lovely gradations of color inside.
 

Raw egg

1. on spaghetti carbonara

Spear the crown of a yolk placed on spaghetti with a fork. Push down softly, touching those 3 holes your fork created. The gush of the yolk juice between spears of fork, there you see your good or bad memories, and even tangled relationships.

2. on rice porridge

Pop a yolk on porridge with a spoon. Draw a circle from inside, painting the white porridge in yellow.

3. on hot cooked rice

Set a yolk on shiny rice, add shiny sesame oil, and season with shiny soy sauce. Just like Queen’s Bohemian Rhapsody goes ‘accelerando’, make a quick move to mix them with passion.

 

Hard-boiled egg

1. egg salad

Use a strainer to mash a hard yolk. If your dish is dark blue, you might see a night sky in autumn with fallen leaves.

2. Topokki (Korean spicy stir-fried rice cake)

Put a yolk in the soup of Topokki. Crush the velvety yolk with the bottom of spoon. The yogurty raw yolk turned hard like an eraser. When you press it, there’s a yellow rubber ball being squashed, but in a moment, it collapses forming hairline cracks.

3. Naengmyeon (Korean cold noodle with soup)

While crumbling the yellow one, you will watch the soup become murky in a twinkling. Most of the eggs in Naengmyeon are overcooked, so that makes it blue. And when it comes blue, I feel blue too.

Others

  1. If you come across a fresh bouncy egg yolk, pick it with toothpicks. See how many of them could be hold. You and your egg both can hold out more than expected.
  2. Let’s cook a sifted yolk in a greased pan. It will be either like lava bubble up, or just shading into light one from deep yellow.
  3. Now, time to fry a raw egg. Watching the bubbles of the egg’s white and yellow inflated in a flash, remind that every moment can be changed completely in seconds just like this.
  4. Break an egg into a small bowl, then pound on a table. Witnessing my strikes make shiver to the egg yolk, let’s try to make mind to become the one, with a very good influence.

자율감각쾌락반응: 달걀의 경우

0. 달걀

테니스 경기에서는 0을 ‘러브’ 라고 부른다. 테니스의 발상지 프랑스에서 0과 닮은 달걀을 ‘러브’와 발음이 비슷한  ‘l’oeuf’(사실은 그리 비슷하지 않지만)라고 부르기 때문이다. 한편 사람들은 부활절에 색색으로 꾸민 아름다운 달걀을 좋아하는 사람에게 선물한다. 달걀 껍질을 깨고 병아리가 나오는 모습이 무덤을 열고 부활한 예수를 상징하기 때문이다. 본의 아니게 사랑과 부활의 상징이 된 달걀은 실제로도 사랑이요 부활이다. 평안한 환경에서 자란 닭이 낳은 건강한 달걀을 신선한 때에 정성껏 조리해 천천히 먹는 것만으로도 우리 몸은 죽음에서 멀어지며, 마음에는 애정이 생겨난다. 정말이다. 게다가 달걀을 요리하거나 달걀을 먹으면서 생기는 시각적, 청각적, 촉각적, 후각적 자극은 형언하기 어려운 안정감과 쾌감 따위의 감각적 경험을 일으키기도 한다. 당신에게 이러한 경험을 선사할 만한 몇 가지 달걀 요리법과 먹는 방법을 소개한다.
 

  1. 수란
  1. 한국식 수란(난탕)
  1. 만들 때: 기름을 바른 국자에 달걀을 깨 넣고, 식초를 약간 넣은 물을 끓인다. 불을 확 줄인 물에 국자의 밑둥만 담가 살랑살랑 움직이며 가장자리가 익도록 한다. 흰자가 어느 정도 익으면, 국자를 물 속에 지그시 담근다. 흰자가 노른자 위에 덮이면서 달걀이 익는데, 투명했던 흰자가 서서히 하얗게 변하며 노른자가 저 멀리 아득해 지는 광경을 가만히 바라본다. 물이 팔팔 끓거나 너무 빨리 담그는 바람에 물살이 일어 흰자가 풀어진다면, 스펙터클한 장면을 볼 수 있겠지만 수란으로서는 실패다.
  2. 먹을 때: 그릇에 옮겨 고명을 올린다. 봄날의 개나리밭 같은 광경을 보고 싶다면 노른자 위에 쪽파를 종종 썰어서 솔솔 뿌린다. 좀 더 강렬하고 따뜻한 노랑-빨강의 대비를 원하면 실고추를 한 올 한 올 올리고, 톤온톤의 담백한 조합을 원하면 깨소금을 한 톨씩 떨어뜨린다. 금속 밥수저를 수란 위에 수직으로 올려 1초 정지했다가 손을 놓는다. 보드라운 수란 속으로 숟가락이 쑤욱 들어가 노른자를 터뜨리게끔 한다.

 

  1. 서양식 수란(poached egg)
  1. 만들 때: 식초를 약간 넣은 물을 끓여 불을 줄이는 것까지는 난탕과 같다. 종지나 앞접시에 달걀을 까서 끓는 물 속에 스르륵 흘리듯이 집어넣는다. 낙지나 해파리 같은 연체동물이 물속에서 사샥 이동하는 것 같은 느낌이 들 것이다. 젓가락으로 드리볼을 하듯 달걀을 만지며 모양을 잡는다. 또는 젓가락으로 물을 휘휘 저어 소용돌이를 만들고 그 속에 달걀을 집어넣는 것도 스릴 있고 모양 잡기에 좋지만, 여차하면 소용돌이에 흰자가 붙잡혀 차분한 정서를 해치게 되니 주의한다. 3분 정도 기다려 흰자가 불투명한 징크화이트로 변하면 국자로 건져낸다.
  2. 먹을 때 1: 동그란 잉글리시 머핀 위에 햄이나 베이컨을 얹고 그 위에 동그랗게 손질한 수란을 얹는다. 노란 홀랜다이즈 소스를 수북하게 붓고 잘 드는 칼로 위에서 아래로 한 번에 자른다. 칼이 바닥에 닿으면 몸에서 먼 쪽으로 비틀어, 갈라진 에그 베네딕트 사이를 벌린다. 아이보리색 빵, 분홍색 햄이나 베이컨, 진한 노란색 노른자, 연한 노란색 홀랜다이즈 소스가 켜켜이 쌓인 단면이 흘러내리는 소스와 노른자로 서서히 뒤덮일 것이다.
  3. 먹을 때 2: 바게트 빵이나 식빵 위에 먹고 싶은 스프레드를 바르고, 먹고 싶은 재료를 얹은 다음, 수란을 올린다. 이번에는 칼을 약간 눕혀서 한쪽을 지그시 누르면서 자른다. 사무라이 영화에서 칼을 휘두르고 약간의 정지된 시간을 가진 후 선혈이 흐르는 장면 같은 느낌을 방법 1에서 찾을 수 있다면, 방법 2는 좀 더 즉각적이고 많은 양의 노른자가 쌓아놓은 재료를 타고 흘러내릴 것이다.
  4. 먹을 때 3: 김치볶음밥 위에 수란을 올리고, 아랫쪽 사방에 젓가락으로 구멍을 뚫어 놓는다. 숟가락의 넓적한 뒷면으로 달걀을 아래에서 위로 힘있게 누른다. 구멍으로 물총처럼 빠져나오는 노른자 분수를 감상한다.

 

  1. 반숙 달걀
  1. 삶은 달걀

냄비에 물을 넉넉히 넣고 불을 올린다. 물이 끓으면 소금 한 스푼과 실온에 둔 달걀을 넣어 7분간 삶는다. 나무 주걱으로 달걀을 살살 굴려주며 달걀의 춤을 구경하고, 끓어오르는 물과 주걱에 달걀이 닿는 느낌을 즐긴다. 7분이 지나면 달걀을 꺼내 찬물로 식힌다. 조금 더 익은 질감이 좋다면 찬물에 넣지 않아도 되지만, 2)번의 아지타마고를 만들 생각이라면 바로 식혀야 한다. 달걀의 껍질을 잘 까서, 물풍선 같은 질감의 달걀을 한 손에 쥔다. 천천히 부드럽게 쥐었다 폈다 하며 날카롭게 굴었던 오늘을 반성한다. 손이 깨끗해 식욕이 남아있다면, 소금에 콕 찍어 입으로 가져간다. 오목하게 파먹을수록 점점 소금을 찍기 어려우니, 먹는 모양에도 주의한다. 우리는 항상 뒷일을 생각해야 한다.

  1. 간장반숙달걀(아지타마고)
  1. 만들 때: 간장1, 맛술1, 물 1에 갖은 재료를 넣고 끓여 맛간장을 만들고 차게 식힌다. 여기에 반숙 계란을 넣고 냉장고에서 하루 이상 숙성시킨다.
  2. 먹을 때: 간장에 재워둔 반숙 달걀을 꺼내 도마 위에 놓는다. 깨끗한 명주실을 팽팽히 당겨 달걀 위에 놓고 천천히 아래로 내린다. 달걀은 반으로 갈라지다가 어느 순간 도마 위로 팽글, 춤을 추듯 나동그라지며 아름다운 단면을 보여줄 것이다. 간장에 물들은 가장자리부터 노른자에 가까워질 때까지, 흰자는 점점 옅어지는 그라데이션을, 노른자는 반대로 연노랑에서 투명한 진노랑으로 점점 진해지는 그라데이션을 보일 것이다. 젓가락으로 양 끝을 잡아 달걀을 쥐었다 풀었다 해 보면, 탄력 있는 달걀의 움직임과 노른자의 투명함이 퍽 아름다울 것이다. 특히 노른자의 표면이 약간 굳었다면 달걀을 쥘 때마다 예쁜 주름이 져서 더 근사할 것이다.
 
  1. 날달걀
  1. 까르보나라 스파게티 위에서

면 가운데에 올라가 있는 노른자의 정수리 부분을 포크로 살짝 찌른다. 포크의 창과 창 사이 벌어진 공간에 아까 찌른 3개의 구멍을 갖다 대고 지그시 누른다. 손목의 스냅과 포크 사이에서 퐁퐁 솟아나는 노른자가 사이에는 인과관계가 있다. 오늘 당신이 당한 억울하거나 기분 좋은 일도 아마 그러할 것이다.           

  1. 흰죽 위에서

하얀 도화지 같은 죽 위에 올라간 노른자를 숟가락 뒷면으로 눌러 터뜨린 후, 안쪽에서부터 점점 크게 천천히 원을 그리며 죽 표면 전체를 연노랑 색으로 물들인다.

  1. 뜨거운 밥 위에서

윤기 나는 흰 쌀밥에 윤기 나는 노른자를 놓고, 윤기 나는 참기름과 윤기 나는 간장을 차례로 천천히 따른다. 그룹 퀸의 ‘보헤미안 랩소디’나 다비치의 ‘8282’에서 느리게 흘러가던 곡조가 갑자기 신명나고 빠르게 바뀌듯, 갑자기 숟가락을 확 집어넣어 이 정적인 음식을 마구 섞는다.
